Lehigh Dining Services, the Office of Sustainability, and Purchasing Services are collaborating to develop a Lehigh Sustainable and Healthful Food Purchasing Policy. In April 2020, a series of surveys were distributed to incoming students, current students, and faculty and staff for feedback regarding which socially and environmentally responsible food options are most important to the Lehigh community.
Additionally, Dining Services and the Office of Sustainability conducted a series of focus groups to help guide and shape the development of Lehigh’s Sustainable and Healthful Food Purchasing Policy. These focus groups consisted of participants from Student Auxiliary Services, the Office of Sustainability, Eco-Rep Leadership Program, as well as members of the Lehigh Sustainability Council. There were 1,189 participants across the two initiatives and we are pleased to share the summary of the results with you.
Significant findings:
-
Increase communication of sustainable efforts
-
Less packaging or more sustainable packaging
-
More plant-based, vegetarian, vegan, produce, meat-alternative, legumes, nuts or natural protein sources
